Once again, I came across another recipe I wanted to share with all of you. I don’t usually use goat’s cheese in dishes but I went ahead and made this anyway and it turned out very good! So let’s get started!
To begin, you will need the following ingredients:
- 8 large tomatoes
- Rigatoni noodles
- 200g/7oz firm goat’s cheese, crumbled (you can purchase it whole and crumble it yourself, too)
- 60ml/4 tbsp garlic-infused olive oil
- One garlic clove, chopped (for extra garlic flavour if you want to add it)
- Salt and pepper to taste

Now, preheat the oven to 190°C/375°F/Gas 5 so that can be preheating while you prepare the tomatoes. What I did was put foil on the pan to help with cleaning up later. Then arrange the 8 tomatoes in the pan nicely. After that, poke a fork into the tops of them so they’ll cook better.

After that, I add the chopped garlic to the tops, drench them as much as possible with the oil and then add salt and pepper. Now put it into the oven and cook for 25 minutes (or until slightly charred).

So while those are cooking, start up the pot for boiling the Rigatoni noodles. I like to add oil to the water as well so that the noodles don’t stick to each other as much. Then I crumble the Goat’s cheese in a bowl so it’s ready when we mix all the ingredients together.

Once the 25 minutes are up, take the tomatoes out of the oven and mash them up with a fork until they’re pretty much just mush.

Now you have the pasta drained and ready and the cheese as well, so what go ahead and mix up the cheese with the noodles.

Once you do that and the cheese is melting a bit, go ahead and add the tomatoes with the oil to the pan and stir it up really well so everything is completely mixed together..

And ta-da! We’re done!
