Chicken Fettuccine Alfredo Recipe

If you love cheese and chicken, then this dish is for you! Preparation time takes about 10 or so minutes (unless everything is pre-sliced, such as mushrooms, cheese and chicken). Total cook time is approximately 25 minutes.

You’ll need the following ingredients to make it:

  • Fettuccine noodles
  • 50g/2oz butter (I use unsalted or else it may end up being too salty)
  • 200ml/7fl oz/scant 1 cup double (heavy) cream
  • 50g/2oz grated Parmesan cheese and Romano cheese (you can add more if you like a lot of cheese)
  • Chopped chicken breast
  • 5-6 sliced mushrooms
  • Some salted butter to sauté the mushrooms in
  • 1 garlic clove
  • 2 cups chopped broccoli
  • Salt and pepper to taste

1. Cook the chicken

So what I do is I start with the chicken just to get it out of the way. Just go ahead and cook it thoroughly with some butter on a non-stick pan.

2. Make the cheese sauce

Then while that is cooking, I start up with making the creamy cheese sauce. With the sauce, I first grate the cheese and have the double cream ready to add once the butter is melted in the pot.

Once the butter is melted (on high heat), I add the cream and whisk that up. Then add the grated cheeses and mix all of it together until it becomes nice and thick.

3. Steam the broccoli

After the sauce is made, set it aside to let it cool and then get started on steaming the broccoli until it’s tender or however you like it. I know some people like their broccoli firmer.

4. Cook the mushrooms

Now for the mushrooms! Add salted butter to the pan and sauté the mushrooms for a few minutes and then add chopped garlic to it for extra flavour.

5. Cook the pasta

I also start on the noodles to get them going until they are done. Tip: sometimes I break the noodles in half so they aren’t too long when eating the meal.

6. Combine all ingredients together

When the noodles are finished go ahead and strain them. Then add the vegetables, noodles, chicken, and creamy cheese sauce together and mix it all up!

Et voilà! It is done! Now you can enjoy this quick and easy meal of Chicken Fettuccine Alfredo!
